Similar in flavour to salmon, Chalk Stream Trout are a wonderful British fish that are responsibly reared in the chalk streams of Hampshire. It is the pure chalkstream water that gives this exceptionally lean, athletic fish such a uniquely fresh taste.
This superb Trout Gravadlax is hand filleted, pin boned and trimmed, before dry curing in a traditional marinade of salt, sugar and dill. The trout fillets are then dressed with rum, black pepper and a sprinkling of fresh dill to produce a Nordic classic with an exceptional texture and depth of flavour.
