Small in nature but not in taste, St Cera is a compact raw cow's milk cheese that is rich in flavour as well as smell. It is gloriously savoury and has a runny, melting, spoonable texture covered in a pungent washed blush rind. With age, this cheese will develop into a firmer texture with warmer, earthy flavours with a nutty undertone.
Sister to the St Jude cheese, both these rich cheeses are a perfect addition to any cheese board. As the washed rind version of St Jude, St Cera is washed regularly in a brine solution, leading the rind to become a pinkish orange. It’s distinctive smell, intriguing rind and complex taste all add to an unforgettable cheese-eating experience to relish.
